Menu Plan Monday

After a weekend of party party party, and some spring in the air - it's time to buckle down and get done with school.  Even though I want to head outside.  Even though I'm ready to close the books and not pick one up until September.  Just one more month.  5-6 more weeks, depending on how disciplined we are.  And it's time for life to resume as normal.  So here are the meals for this week:

Monday: creamed eggs and biscuits, strawberries
Tuesday:  taco salad, cornbread, watermelon
Wednesday:  slow-roasted rosemary and garlic chicken (though I'll magically turn the rosemary into thyme because not everyone loves rosemary)
Thursday:  beans and rice
Friday:  BLTs, salad

Don't forget:  One week from tomorrow, May 3rd, is Skinny Tuesday over at Give Jewelry. You can like the event on facebook and join the movement!  From their facebook page:   
"on the 1st Tuesday of every month we skip lunch. The money we’d otherwise spend on burgers or fries or a spinach turkey wrap then goes to a local charity that fights hunger."
We can take time off from all this cooking to remember those in real need!

Update on last week:

made Pioneer Woman's Hot Cross Buns! mmm. Will be doing that every Good Friday!
also, the Mexican Flatbread Pizzas were easy, fun, and very edible!
