What's for Dinner? Wednesday!

It's 10:00 and we just got the boys in bed.  Egads.  At some point we won't be able to blame it on the time change.

Last week Candace made Baked Oatmeal:  I'm adding it to my plan this week.  Always love something new!  Speaking of, I finally made the Pioneer Woman's meatloaf and wow!  It's delicious.  I don't even like meatloaf (it's in the name, I'm sure).

This is week 3 of "What's For Dinner? Wednesday", and I have to say that every day is better when I have a meal plan.  It seems I was in the habit of kind of denying dinner was coming.  Every day I just refused to think about it until around 4'o'clock when I started dreading it, then 5 when I started frantically rummaging through the cupboards hoping for a miracle, then 6 when I served something mediocre or burnt.  Eek!  Ok, some days I managed to put something delightful on the table, but now, with my plan in hand, every night is delicious!  (Do I sound like an add?)

So here's this week:

A few notes:  lunches look the same, I know.  Not much reason to be creative on that front.  I almost always serve salad with dinner, so I don't usually note it in the menu.  Just know it's really there.

the other recipes are from cookbooks, except the red beans and rice, which I can't type up right now.  Maybe later.
I'll take this opportunity to say: I use the Best Recipe cookbook all the time.  That's where my Smothered Pork Chops are coming from this week.  If you don't have it, you should save your birthday money and buy it.   It's awesome.  It gives a little article on why they decided on each recipe.  There are little tidbits of info regarding the science of cooking, advice on the best products, etc.  I think of it as kind of the Consumer Reports of cookbooks.  (don't get me started on how much I love Consumer Reports).

So what's for dinner at your house? Do you like having a meal plan as much as I do?

You are so inspiring! I do love making meal plans but I am not so rigid. I tend to buy for 4 meals and then I squeeze them into the week as it fits. So this week I had in mind one night I'd make this bowtie chicken/basil pasta. But I didn't know which day I'd do it. And I knew I would make chili and cornbread, but didn't know when. So ... it's kinda nice right now for Lent we are having cereal every Monday for dinner. limited clean up and saving money and saving planning! YAY! :) :)

Maybe I should confess that I don't always (or ever) totally stick to the plan. But now I have all the ingredients to several things so that when I need to change things around I can!

I love America's Test Kitchen! I don't have that book but have used Cook's Country magazine for years...definitely the BEST :)
And I love their skillet smothered chops.
