Mexican Sandwiches

A couple of weeks ago I had these on my menu and wondered if anyone would have any idea what they were.  So I decided to enlighten you, because this is a really good recipe for those nights you need dinner on the table quick.

1 can refried beans
6 strips of bacon
grated cheese
sandwich rolls
butter or butter spread (optionall)

*get ready, this may be tough to follow*
1.  Chop the bacon into small pieces, cook on the stovetop.  Remove to paper towel-lined plate.  Set aside.
2.  Heat the beans in the microwave
3.  Build the sandwiches:  Spread some butter over a sandwich roll, smother with beans and add bacon.  Sprinkle with cheese. Place on a baking sheet.
4.  Heat under the broiler until bread is slightly crispy and cheese is melted.
5.  Garnish with hot sauce, salsa, sour cream, etc.
Yum
*I was kidding, it's not tough at all!*

Hope you use it this week to make one of your meals super easy!
