Weekly Menu Plan - April 17-23 and Mom Adventure

The best thing about menu planning is when you don't end up making all your meals from the week before you get to add them to your new plan.  Groceries are already in the pantry.  And your good to go.  Another added benefit:  going through your old menu plans for ideas.

So here we go:
Mon:  Beef and Bean Burritos
Tues:  Pecorino Pasta
Wed:  Mexican Flatbread Pizzas
Thurs: beans and rice
Fri:  Good Friday - with family
Sat:  barbeque chicken
Sun:  Easter - with family

I'm quite proud of myself, this week I used a couple Pioneer Woman recipes, but also used a Cooking Light recipe that I love.  The pecorino pasta is easy to make and everyone loves it.

Update on last week's recipes.  Another smashing success in the dinnertime arena:  Chicken with Tomatoes and Garlic.  Mmm.  And pasta.  Mmm.  And, with this recipe you can use bone-in chicken thighs, which have been super cheap at Vons (Safeway) and Albertsons lately at .77/pound.

Going to try to make Hot Cross Buns for breakfast on Easter. Because they are traditional Easter fare, I hear.

And also, I plan on making these cookies the night before with the kids.  We've made them every year and I think they are an excellent way to demonstrate the Easter message of Jesus dying on the cross and the empty tomb Easter morning.

On other fronts:  we went to the beach yesterday and I am now the mom.  If I doubted it before there is no longer any room.

We did some pseudo adventurous beach climbing: around and up and down large outcroppings of rocks.  Up and down little cliffs to get to the best beach.   And then I did it.  I stayed true to every mom video out there.  As everyone else was briskly climbing across the last rocks I slipped and quite dramatically rolled down mine, landing less than gracefully in the ocean, halfway dousing myself, completely filling the diaper bag with water, and acquiring numerous bruises.  But hey, I was out there.  I was FunMom, if not also WetMom and BruisedMom. 

Unfortunately there was no video camera on me - or I'm sure we could have won millions.

And nobody even saw it.  They turned around in time to see me waddling over in dripping wet clothes and seaweed.  I'm so dignified.  (Charlie was carrying the baby, and they never even almost fell.  Again, I'm so dignified.)
