Waffles

Once a week or so I make waffles for breakfast. I use Grandma Di's recipe, which involves beating egg whites (obviously). We got our waffle iron for Christmas and promptly tried every waffle recipe in any of our cookbooks. Then we tried Grandma's recipe and it beats every other recipe out of the ballpark. Betcha want to know what to do...

2 c flour
2 tbsp. sugar
3 tsp. baking powder
1 tsp. salt
3 eggs, separated
4 tbsp. melted butter (or shortening)
1 1/4 c. milk

1. Beat eggs whites until stiff but not dry, set aside. (with my hand mixer at level 7 this takes approximately 1min, 30sec.)
2. In a separate bowl, blend flour, baking powder, salt, and sugar.
3. In still another bowl, beat egg yolks and add milk and butter to them. Mix thoroughly. Add to dry ingredients and combine.
4. Gently fold in the egg whites.
5. Bake in hot waffle iron for 3-4 minutes.

We have a belgian waffle maker. I don't know what these turn out like in a traditional one. Let me know if you try it!
