One of Susan's recent posts got me thinking about finding a spaghetti sauce recipe using fresh tomatoes. I wanted one that was easier than most I've seen, and had ingredients I could find over here in Bali. I found one on Allrecipes.com. Click here for the original recipe. The modified version I used is as follows:
Fresh Tomato Sauce for Pasta
1/4 c. olive oil
6-8 tomatoes, chopped
3 onions, minced
2 green bell peppers, minced
4+ cloves garlic, minced (depending on how much garlic you like)
1.5 zucchini, grated
1-2 carrots, grated
3 Tbsp. chicken broth
salt & pepper to taste
Italian seasoning to taste (1-3 tsp.)
1lb. ground beef if desired
1. If using ground beef, brown and drain fat.
2. In a large saucepan, heat oil over medium heat; add all ingredients except ground beef.
3. Mix ingredients well; cover and simmer for 30 minutes. Add beef during last 15 minutes. Serve.
I also made my own Italian seasoning, since I didn't bring any with me, and it's quite expensive if you can find it in an import store.
Italian seasoning:
basil
oregano
rosemary
cilantro
thyme
Mix equal amounts of each spice (eg: 3 Tbs. of each one) and store in air-tight container. Use whenever recipes call for Italian seasoning.
Most homemade spaghetti sauce recipes I've used/seen either require long cook times, extensive procedures with the fresh tomatoes, or canned tomato puree & diced tomatoes (the cans are about $3-$4/each here, and not something I've wanted to spend grocery money on). So I thought this was a good alternative.
We also spread the sauce on pieces of a baguette, mmm!

I was about to ask where you got the Italian seasoning when I kept reading and saw that you made your own. Very ingenious. I will try this when I have a better kitchen, whenever that will be. But it sounds so good so maybe I will try it at your house first. :)
I looked up some of the spices and translated them so I could find them at the store. But rosemary was expensive.
Oh yay! I am overwhelmed with tomatoes and zucchini right now so this recipe is most welcome.
